A special Easter treat for the family!
Line a tin with baking paper.
Get a bowl and melt the choclate on a low heat, adding the vanilla. Stir occasionally.
Once melted, tip in the icing sugar and lightly beat.
Allow the mixture to cool for 5 mins, stirring occasionally, then add 3/4 of the crushed Mini Eggs.
Smooth mixture into the tin and sprinkle the remaining eggs over the top.
Place in the fridge and, once set, cut into squares.
