When life gives you lemons, make Lemon Lockdown Kisses!
Mix together in a large bowl the butter, sugar, egg, vanilla, and zest from 1 lemon.
Add the flour and form a dough. Roll out the dough on a lightly floured surface and cut out your shapes.
Place on trays lined with baking paper, cover with cling film and chill in the fridge.
Heat the overn to 200C/180C (fan) and bake for 8-12 mins. Once cool, spread the lemon curd on half of the biscuits and top with the second biscuit.
Mix some lemon juice with the icing sugar and drizzle over the biscuits and scatter over the zest. Leave to set.
